Generally speaking, three categories of oil are sold:

  • Olive Oil: contains only refined olive oils and virgin olive oils
  • Virgin Olive Oil
  • Extra Virgin Olive Oil

Extra Virgin Olive Oil is considered to be superior quality because it is obtained from the best olives using mechanical processes, achieving an oil with excellent organoleptic qualities that can be consumed immediately with all its aroma and unique flavour.
